Nutritional benefits of the meals.

Quinoa is a complete protein which means it is an excellent choice for vegan and vegetarians. It is also a good source of manganese, magnesium, folate and phosphorous which makes it a valuable food choice for those who suffer from migraine headaches, diabetes and who wish to improve cardiovascular health. It is a good source of fibre and vitamin B2 which is necessary for energy production.

Onions and Garlic are good anti inflammatory foods and have cardiovascular benefits, with garlic being shown to reduce blood triglyceride and cholesterol levels. Garlic has good levels of vitamin C, B6 and selenium. Onions have been shown to have excellent anti cancer and bone health properties.

Coriander seeds are good for the digestive system, reducing flatulence and stimulating the appetite by aiding the secretion of gastric juices. The roots are high in potassium and iron.

Basil is a member of the mint family which when cooked stimulates digestion and is a beneficial antioxidant. It has recently been found to help reduce blood-sugar levels.

Cherry Tomatoes are an excellent source of antioxidant and a good source of vitamin C and E, beta carotene and the mineral manganese. This means they are valuable in the fight against cancer, cardiovascular disease, and they support bone health.

Courgettes again are a good source of vitamin C, and manganese. They are also antioxidant foods.

Red Peppers have antioxidant and anti-inflammatory properties which provide anti-cancer benefits. They are also high in vitamin C, almost twice that found in a typical orange.
